Lentil Fruit Salad

lentil saladThis recipe is as refreshing as it is nutritious. Plump black lentils mixed with chunks of mango, strawberries, tomatoes and onions will tease your taste buds into submission. A splash of balsamic vinegar is the only flavoring that this colorful salads needs. Serve as a side dish or as a light meal.
Yield: 3 serving

Here’s what you need…

  • 1 cup black lentils, cooked
  • 1 medium mango, cut into 1 inch cubes
  • 1 medium tomato, chopped
  • 6 medium ORGANIC strawberries, chopped  ( trust me! At least buy organic strawberries.)
  • 1 tablespoon red onion, finely chopped
  • 1 tablespoon balsamic vinegar  or try Paul Newman’s Balsamic Vinegrette
  • Sea Salt and pepper to taste
  • Place the lentils in a medium bowl. Chop the fruit and onions, add to lentils.
  • Add balsamic vinegar to the lentils and fruit, mix until well combined.
  • Nutritional Analysis: One serving equals: 148 calories, 1g fat, 27g carbohydrate, 10 g fiber, and 9g protein.

    My Favorite Lunch: Quick,Fit Recipe

    One of My Favorites:
    Add all to a bowl and mix

    • Cool Organic Brown Rice: Premade whole foods (found in frozen section) brand. 1/4-1/2 cup
    • Mixed Organic Greens
    • 2 Tbsp nuts and seeds
    • Diced Tomatoes, Cukes, Carrots, Purple Cabbage,Beets
    • Protein 4-6 ounces Choose one of the Following:
      albacore tuna, Wolf’s Neck Shaved Precooked Steak, Turkey Bacon, Free Range Chicken, Organic Chicken Sausage (lean without animal skin), Salmon or White Fish
    • 2 Tbsp Organic Golgi or Cranberries
    • 1/2 cup fresh organic melon, mango, berries or favorite fruit
    • low fat, organic dressing

    Dressing Examples:
    Whole Foods organic honey mustard
    Paul Newmans’ Balsamic Vinegrette Dressing
    Paul Newmans’ Light Italian Dressing
    Paul Newmans’ Shitake Mushroom Dressing
    Amy’s Terriyaki marinade
    Whole Foods organic Ranch

    • Check off 3-5 that you like and stick to these for the first 2 weeks.
    •  Focus on cutting back on your starches for these 2 weeks as hard as it may be, however we are going for momentum.  Momentum and  results will bring you success and a sense of accomplishment. 
    • Look at your goal sheet every day when waking up.
    • Drink 16 ounces of water when you wake. Add fresh squeezed lemon
    • Sometimes 8 ounces fresh squeezed orange juice or fresh veggie juice helps stabalize blood sugar cravings
    • Try to buy organic fruits and dairy as much as possible.

     

    1. Nonfat cottage cheese/berries
    2. greek Yogurt/fresh berries/hard boiled egg
    3. Protein drink/slice eziekiel toast with almond butter  
    4. Oatmeal (1/2-1 cup)/1-3egg whites  or greek yogurt with berries
    5. 1-2 cups organic blueberries/egg whites  
    6. Low Fat organic yogurt with added scoop of protein powder
    7. Greek yogurt, fruit, handful almonds
    8. Turkey Bacon, fruit cup
    9. Organic Oats/turkey bacon (all natural)  
    10. Turkey or Chicken sausage/ hard boiled egg
    11. Egg white omelet with veggies/sliced fruit
    12. Hardboiled egg/veggie drink
    13. Veggie Drink (organic greens) added to pineapple juice and water/nonfat cottage cheese
    14. egg whites with sliced grilled chicken and slice of organic cheese
    15. Organic oats with added almonds, berries and flax oil
    16. Slice eziekeil toast with organic almond butter/ sliced banana
    17. Slice eziekiel toast with turkey bacon/egg whites/ slice cheese
    18. Salmon/hard boiled egg/ sliced melon
